Contrary to popular belief, blondies are not just brownies without cocoa powder. They are a dessert all on their own full of buttery, caramelly flavor!
Ingredients:
1/2 cup butter, melted & cooled slightly
1 cup packed brown sugar
1 large egg
1 teaspoon vanilla
1/2 teaspoon baking powder
1/8 teaspoon baking soda
Pinch of salt
1 cup all-purpose flour
1/2 cup butterscotch chips (Get creative - peanuts and white chocolate chips are also yummy.)
Make It:
Preheat your oven to 350℉. Line an 8x8 inch square baking pan with parchment paper. (Quick tip: Crumple up your parchment before smoothing it into your pan - it will be more flexible!)
Whisk together the melted butter and sugar, then add egg and vanilla.
Add the flour, baking soda and powder, and salt. Carefully fold into the sugar mixture.
When most flour spots are gone, add your chips/nuts and fold in.
Pour into your prepared pan and spread evenly. You may need to grease your hands and gently press the dough to reach the edges.
Bake in your preheated oven for 16-24 minutes. You can test doneness with a toothpick - if light crumbs stick, they're done!
Cool for 10 minutes before lifting the blondies out of the pan with the edges of your parchment paper, then slice and enjoy. Or cool completely before eating.
Keep leftovers airtight for up to 3 days.
